Mozzarella Bread Salad

Ingredients
  • 1loaf Italian breadcut into 1″ cubes
  • salad greensof your choice
  • 1 red peppercut into strips
  • 1 green peppercut into strips
  • 1cup grape tomatoescut in half
  • salt and pepperto taste
  • 1/4cup Loide’ Neapolitan Balsamic Vinegar
  • 1/2cup Loide’ Tuscan Olive Oil
  • 1/4cup red sliced onions
  • 1/4cup scallionschopped
  • 1/2cup pitted green olivescoarsely chopped
  • 1/4Tsp. crushed red pepper flakes
  • 1pound fresh Mozzarella
Instructions
  1. Combine bread, salad greens, peppers and grape tomatoes in a large salad bowl, salt and pepper to taste.
  2. In a separate bowl whisk the Neapolitan Herb Balsamic and Tuscan Olive Oil together. Add onions, scallions, olives, red pepper and fresh mozzarella.
  3. Marinate for 10 minutes.
  4. Combine with the bread/salad mixture and serve immediately.
