Sweet-Savory Shrimp Ceviche

  • 12medium shrimpdeveined, tails removed, cooked and chopped
  • 1large avocadochopped into small cubes
  • 2Tbs. Loide’ Persian Lime Olive Oil
  • 2 limesjuiced to 2 Tbs., the remainder sliced for garnish
  • 1medium mangochopped into small cubes
  • 2small tomatillosfinely chopped
  • 1small jalapenoseeded, finely chopped
  • 1/4cup red onionfinely chopped
  • Seasonello sea saltto taste
  1. Place chopped avocado, Lime Olive Oil, and lime juice in a bowl and gently stir.
  2. Add remainder of ingredients and gently combine.
  3. Place in bowl and serve with chips of your choice. Also great in a lettuce wrap or mix this in a salad.

Instead of shrimp use a white, flaky fish.

Flavored olive oils are perfect for this dish. Try Loide’s Lemon, Mandarin, Blood Orange, Basil, Cilantro & Roasted Onion or Tuscan Herb oils or to add some heat, try Harissa, Green Chili or Chipotle Olive oils.
