Exclusively made for our discerning consumers from Italian Trebbiano, Albana, and Montuni grapes which add body, complexity, and richness that Trebbiano grapes alone cannot achieve. The result is crisp, light, fruity vinegar with a touch of sweetness reminiscent of handcrafted vinegars from northern Italy. Extremely adaptable, it can be used with any of the Extra Virgin Olive Oils as well as the full complement of flavored oils. This is a tart Balsamic vinegar with a residual grape flavor, aged in new white oak barrels for maturation and aging to an amazing 1.28 density and 4% acidity. Try it with citrus oils on a wedge of lettuce, accompanied by fresh tomato slices and a rich Bleu or Gorgonzola cheese.
