Ingredients
- 12 medium shrimp deveined, tails removed, cooked and chopped
- 1 large avocado chopped into small cubes
- 2 Tbs. Loide' Persian Lime Olive Oil
- 2 limes juiced to 2 Tbs., the remainder sliced for garnish
- 1 medium mango chopped into small cubes
- 2 small tomatillos finely chopped
- 1 small jalapeno seeded, finely chopped
- 1/4 cup red onion finely chopped
- Seasonello sea salt to taste

Instructions
- Place chopped avocado, Lime Olive Oil, and lime juice in a bowl and gently stir.
- Add remainder of ingredients and gently combine.
- Place in bowl and serve with chips of your choice. Also great in a lettuce wrap or mix this in a salad.

Variations:
Instead of shrimp use a white, flaky fish.
Flavored olive oils are perfect for this dish. Try Loide’s Lemon, Mandarin, Blood Orange, Basil, Cilantro & Roasted Onion or Tuscan Herb oils or to add some heat, try Harissa, Green Chili or Chipotle Olive oils.
